Headstones and plaques don't represent a large part of the environmental impact of the funeral industry, partly because cremation represents over 70% funerals in this country. You can't do much about the impact of the freight of stone from Asia (except carbon off-sets) but one thing you can do is ask your provider about quarry labour conditions. Only by customer pressure can bad labour practice, in terms of safety and remuneration be addressed. Anecdotal evidence points to horrific working conditions at some quarries - try and ensure yours comes from a reputable source.
Plaques are small (so therefore has a small impact) and the material has not been lost - it still exists and could ultimately be recycled.
